We love oats! We make them for breakfast, we make them for snacks, we make them for lunch, and sometimes we even make them for dessert. The best part about oats are that they are healthy and easy to make. My kids love to make their own hot oatmeal for breakfast. Our newest delicious and healthy oats recipe is one we are super excited about. We can’t wait to show you our Rainbow Parfaits.

What You Need for Healthy Rainbow Parfaits
Fruit
You can pick and choose your favorite fruits to set out for your children. The first one listed in each list is the one we went with, but there are so many possibilities.
Red- rasberries, strawberries, cranberries
Orange- mango, peaches, cantaloupe, oranges
Yellow- bananas, starfruit
Green- pear, grapes, starfruit, kiwi
Blue- blueberries
Purple- blackberries
Yogurt
We love using vanilla greek yogurt, but you can use your favorite!
Oats
We used our Kashi Crunch because we love that the oats don’t get soggy and the flavor stays for the entire parfait. Another great plus is all the protein in the Kashi Crunch! What a great start to the day.
Making Delicious and Healthy Rainbow Parfaits
Step one is to start with the Yogurt on the bottom of glass, jar or bowl. We have a ton of mason jars from our recycled wedding a few years ago so we love putting everything in a mason jar. Plus mason jars are just awesome!
Top that with about 2-3 scoops of Kashi Crunch.
Now you are ready to layer your delicious rainbow!
We made our rainbow by starting with the end of the rainbow and working backwards. You could start with read or purple. Did you know I still have to say ROY-G-BIV before I put a rainbow in order. Hmmm, will I always do this?
The result was utterly amazing. It was like a art masterpiece that we didn’t want to eat, but we did want to eat it. But we didn’t. But we did. But we didn’t. Okay, okay, you get the picture.
Once you get to the top of your jar, you can add a dollop of yogurt to the top and sprinkle just a tad bit of granola. The finished product will be a masterpiece.
Oh and the best part? Getting to eat it of course! It is absolutely delicious and more importantly, healthy!
