Last week we made some simple Pokemon sugar cookies, and my daughter just couldn’t get enough! We had to add to our Pokemon Go themed desserts, so we had so much fun making these Kid-Made Pokemon Cupcakes!

These cupcakes are super easy for little helpers to help make and are a fun surprise for back-to-school lunch boxes.
Totally Awesome Kid-Made Pokemon Cupcakes
I’m sharing my go-to chocolate cake recipe to make these simple Pokemon cupcakes, but you can substitute your favorite recipe (or even a boxed mix) in it’s place – as long as you promise that you’ll be using my homemade vanilla buttercream to frost them! How to Make Pokemon Cupcakes
First, make your chocolate cupcakes:
- 2 cups granulated sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
Stir sugar with flour, cocoa, baking powder, baking soda and salt in a large bowl.
Homemade Vanilla Buttercream
While the cupcakes are baking, prepare your vanilla buttercream frosting:
- 1 cup butter
- 3-4 cups icing sugar or powdered sugar
- 2 teaspoons vanilla
- 2-4 Tablespoons heavy cream or milk
Next, you can portion out 1/2 cup of your buttercream and dye it red, but I preferred to go with a store bought red frosting because red and black are so hard to make at home. You mostly taste the homemade frosting anyways so it doesn’t really feel like a compromise to me!
Cover half of the cupcakes with the red frosting and allow to set before moving on to the black frosting, or you’ll experience color bleeding like I did!
Use a black frosting pen to make a line down the center of the cupcake.
Place a white chocolate chip in the center and then use the black frosting pen to outline the white chocolate chip. (You can also use any round, white candy like an M&M if you prefer.)
