Totally Delicious Gingerbread Rice Krispies

If you’ve ever made gingerbread cookies with kids, you know – it takes forever! It’s one of the most tedious doughs to make, plus with the fridge time, rolling it out and baking – after last year, I knew I needed a different gingerbread treat to make with my kids. I needed a quick and simple recipe to make with my kids! These Totally Delicious Gingerbread Rice Krispies Treats are the perfect solution for those of us who love the taste of gingerbread, but hate the work!

Rice Krispie Treats always go over like gangbusters with my crew – they love helping to make them and they get to enjoy their treats shortly after as a very quick reward for their “hard work.”

Especially if you are making them with a group, Rice Krispie Treats are great because there is a low risk of missing ingredients, you don’t have to worry about “leaving them in” too long (like you would with an oven), and the kids can really take equal turns adding handfuls of marshmallows or cereal, or stirring the melted marshmallows.

A couple other easy recipes my kids love helping to make are our Chocolate Melts and our foolproof strawberry tarts.

While we used gingerbread-flavored marshmallows for our treats, you can easily use regular marshmallows and add some gingerbread spices to the same effect (I describe how in the note section of the recipe).

What You Need to Make Gingerbread Rice Krispies

Ingredients:
3 Tablespoon butter
*NOTE: if gingerbread marshmallows are not available to you, use regular marshmallows and add 1 teaspoon molasses, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger and 1 teaspoon cinnamon to regular marshmallows AFTER melting.

How to Make Gingerbread Rice Krispies

Oil or line a 9×9″ square baking pan.
Place your marshmallows and butter in a large, microwave-safe bowl.
Heat for 30 seconds, then stir, and reheat as necessary.
Add in the Rice Krispies and stir well, until coated.
Fold the mixture out into the baking pan.
Wet your hands and then press down on the squares to make them even.
Refrigerate 2 hours to set.
Once the Rice Krispies have set, heat the almond bark in a small microwave-safe bowl for 30 seconds, then stir, and reheat if necessary.
Drizzle the white almond bark over the squares. Add any sprinkles or decorations while the almond bark is still wet.
Once the almond bark is set, about 5 minutes, cut into squares and serve.
