My kids love helping me whip up some fun snacks and treats for us to enjoy all Easter weekend, especially if we can use seasonal Easter candy like peeps. Totally Delicious Peeps Cupcakes for Easter
The cupcakes don’t take long to make, and they’re totally adorable. They’ll look and taste great on your Easter table! Your family will love these totally delicious peeps cupcakes for Easter, and they’ll be requesting that you make them every single year from now on!
What You Need to Make Peeps Cupcakes for Easter
1 box Betty Crocker™ SuperMoist™ carrot cake mix
1 cup baking butter
1 cup of whole milk
2 Tsp. of Vanilla extract
1/2 cup shredded carrots
8 ounces cream cheese, room temperature
4 TBSPs unsalted butter, room temperature
2 cups powdered sugar, not packed
1 to 2 tsps pure vanilla extract
How to Make Adorable Peeps Cupcakes for Easter
Start by heating your oven to 325°F. At the same time in a large bowl, beat cake mix, butter, milk, vanilla and eggs on low speed 30 seconds. Beat on medium speed 2 minutes.
Once your batter is evenly mixed, pour into baking cups in cupcake pan, filling each about 2/3 full and bake 17-22 minutes. Let them cool completely.
Finally, cut out a whole in the center to fit the Peeps.
How to Make the Frosting.
Cream together the cream cheese and the butter in the bowl of a stand mixer. Add the powdered sugar one cup at a time and then add in the vanilla extract.
Insert your peep in the center of the cupcake. This is probably my favorite part.
To make it look like grass, pipe your frosting over cupcakes around the Peep candy using a star pastry tip.
Lastly, sprinkle your Easter cake sprinkles on the frosting. Finally, your adorable cupcakes are complete.
