I’m so excited to watch the Peanuts movie with my children – I loved the show growing up and the special features were always a holiday tradition. It’s a toss up which one is my favorite between The Great Pumpkin and Merry Christmas, but one thing is for sure we love Peanuts. I’ve cooked up the perfect Peanut chicken stir fry to go along excitement for the new movie being released!

Dinner and a movie sounded like the perfect way to start our own Peanuts family tradition. I had already grabbed Tyson Chicken Nuggets and knew those would be a quick fix for supper, but I wanted to play up that Peanuts theme for the night.
This Thai-inspired Chicken Stir Fry fit the bill – it’s a hearty and delicious meal my whole family loved, and it only took me 20 minutes to whip everything together – so I could focus on spending quality time with my family.

Peanut Chicken Stir Fry Recipe
Recipe based on a family of 5.
Ingredients:
20 Tyson Chicken Nuggets
2 cups cooked quinoa (1 cup uncooked)
2 carrots
1 large zucchini
2 sweet peppers
2 cups sugar snap peas
Handful basil
3 cloves garlic (or 1 Tablespoon minced)
1 shallot
3 Tablespoons peanut butter
1 Tablespoon sweet chili sauce
1 Tablespoon soy sauce
2 Tablespoons coconut oil

Directions
Cook the Tyson chicken nuggets according to package directions. Once cooked, allow to cool slightly before slicing into strips.

Cook the quinoa according to package directions (boil the water with the quinoa in the pot, stirring frequently. Once the water reaches a boil, cover and remove from heat.)
Chop the garlic and onions, shred the carrots and zucchini using a spiral cutter, and slice the sweet peppers.

Heat the coconut oil in a wok or frying pan. Add half of the garlic and onions and cook until translucent. Add the remaining vegetables and saute for 5 minutes.
Meanwhile, make the sauce by heating the remaining garlic and onions in a wok, and then stirring in the peanut butter, soy sauce, and sweet chili sauce. (You can alternatively blend these five ingredients together first and then add to a wok.)

Heat the sauce through for at least 2 minutes, taste and adjust the flavor by adding more of the soy sauce, chili sauce, or peanut butter, before adding the sauteed vegetables, quinoa, and sliced Tyson chicken nuggets. Stir to coat.

This Peanut Chicken Stir Fry is delicious hot or cold, and can be reheated for school or work lunches. My kids loved it, and I loved that it was a quick meal with a great dose of protein, a whole grain, and plenty of veggies!
